A Rochester Hills native, Chef Justin Vaiciunas brings his award-winning expertise and artistic vision to The Jackson. His lifelong passion for food and culture has taken him across the country’s top culinary destinations opening hotels and restaurants – from Miami and The Hamptons to Chicago, Palm Beach, San Diego, and Dallas.

Winning Metro Detroit’s Best Chef and the city’s Best New Restaurant in 2015, Chef Vaiciunas has proven his mastery goes beyond technical skill. With a deep appreciation for local, seasonal ingredients, he creates every dish with a profound artistry and soulfulness aiming to provide a dynamic and captivating dining experience.

Leading The Jackson’s beverage program is Michael Mauro, our resident wine curator and East Lansing native. Michael’s lifelong passion for wine and spirits has earned him esteemed certifications from the Court of Master Sommeliers, Wine and Spirit Education Trust, and the Sake Service Institute of Japan.

With an expertly trained palate, Michael has curated an exceptional wine list celebrating both renowned and up-and-coming vineyards from across the globe. Yet his true devotion lies in showcasing Michigan flavors and locally sourced ingredients.
